Foreign visitors to West Africa are often shocked by it’s citizens’ generosity and interesting flavors used in its cuisines. What people don’t often realize is that West African cuisines have had a significant influence on Caribbean, Australian and American cooking.
Although some of these recipes have been altered to suit the sensibilities of their adopters, they retain a distinct West African essence. This meal has been put together to showcase the roots of the many flavors that have influenced a large part of western cooking.
